Sushi Tadokoro sits in a strip mall on the edge of Old Town, a neighborhood better known for Mexican food and Mormon history, which makes the room feel like a secret even though it isn't one. Inside, the kitchen runs a tight Edomae program: Spanish mackerel flown from Japan, halibut cured with kelp until it turns flaky, engawa with real crunch, kawahagi carrying its own mound of liver. Nothing gets sent out just to fill a course count.

The lunch sashimi omakase is the smart way in. It doesn't just serve the mackerel as nigiri, it brings the skeleton back salt-grilled, meant to be picked apart by hand. Using one fish twice, with two different intentions, is the mark of a kitchen working from discipline rather than showmanship.

The sake list runs nearly as deep as the food menu, poured in carafes set on ice, and it changes the meal rather than just accompanying it.

Michelin held a star here three years running before shifting to a general selection, recognition that tracks with what's on the plate rather than inflating it. For this level of precision, tucked into this strip mall, it's a rare find.

The Spot
Chef Takeaki Tadokoro was born in Kanagawa, Japan, in 1971 and trained in sushi there for two years before moving to the U.S. in 2000. He spent the next 12 years working in San Diego before opening Sushi Tadokoro in 2012, bringing traditional Edo-mae technique to Old Town.

The restaurant runs omakase-style, built around nigiri sourced from premium local and seasonal ingredients. Reviewers point to the mushroom salad and tempura as recurring standouts alongside the fish itself.

Michelin awarded Sushi Tadokoro one star for three consecutive years, 2021 through 2023, before shifting it to Selected status in 2024, 2025, and 2026. It has also been named to the Eater 38 list for San Diego.
