Fish Guts opened in Barrio Logan in 2023 with a menu built around specialty tacos rather than a full seafood spread. The kitchen works from daily catches, and regulars point to the Espada, the mushroom tacos (hongos), salmon al pastor, and coconut shrimp (de coco), each served with a side of Mexican slaw.

Drinks lean into the same Baja-adjacent register — Mexican craft beers from Ensenada, a rotating hibiscus water, and a cocktail list that includes the Al Pastor Margarita.

The space is small and the seating limited, which hasn't stopped it from becoming a fixture in a Barrio Logan dining scene that's shifting fast around it. Fish Guts holds a spot on the Eater 38.
