De Cabeza El Unico takes its name seriously: cabeza is the reason people come, served either boneless or "complete" with the actual lamb skull still attached. A mural inside shows the chef holding a skull over a steaming vat, in case the point wasn't clear. For a gentler introduction, the cabeza also comes in a bubbling broth topped with salsa verde and cilantro, served alongside thick handmade corn tortillas.
Beyond the cabeza, the menu is large, covering nearly every part of lamb, cow, pig, and chicken. Tacos filled with slow-roasted pork pibil and marbled beef rib meat round out the lineup.
