Zilla Sake opened in the spring of 2007 as Portland's first dedicated sake bar before evolving into a traditionally-focused sushi destination when head sushi chef Kate Koo established the sushi bar in the summer of 2008. Koo took formal ownership of the restaurant in 2016 and continues to run it today.
The menu runs omakase alongside a full a la carte lineup — salads, sashimi, nigiri, maki, and small cooked dishes — built on carefully sourced ingredients in straightforward preparations. The entire food menu is gluten-free. The sake list pairs well-known bottles with selections hand-picked by the restaurant's owner, reflecting the bar's roots in Portland's sake scene.
Portland Monthly named Zilla Sake to one of its best-of lists.
