Pasar is Wajan's snackier sibling, built for grazing rather than a single centerpiece plate. The instinct is right: load the table with cemilan and gorenang, order the sate padang for the flank steak skewers bathed in that mellow curry gravy, and use the lontong to mop up everything left on the plate. The murtabak daging, that fried turnover stuffed with spiced beef and egg, does the same work — small, dense, built to be shared and immediately reordered.

The room backs up the food instead of decorating around it. Batik on the walls, folkloric figurines on the shelves, a thatched awning over the bar — it reads as Indonesia filtered through Alberta Street rather than a theme park version of either. Cocktails built around Indonesian spirits give the snacks something to argue with, and the pandan-and-ube sweets scattered through the meal keep the pacing loose instead of formal.

This is confident, specific cooking that knows exactly what kind of night it wants to be: playful, a little transportive, good for a midweek date without pretending to be more than that. Bon Appétit's Best New Restaurants nod in 2024 and a spot on a national recognition list both landed on a place that had already made its case at the table. Pasar earns it.
