Hamono Sushi is a small omakase counter and dining room in downtown Portland, seating four at the counter and six tables in the room. It opened in August 2024 under new ownership, built around fish sourced weekly from Toyosu Inner Market in Tokyo — bluefin tuna, Hokkaido uni, Naruto sea bream, and mackerel cured in kombu among the selections that rotate with what the market offers.
The format runs in two parts. First, a twelve-piece chef's-selection omakase served one piece at a time, paced through two rounds. Once that's finished, the rest of the menu opens — sashimi, nigiri, signature rolls, and kitchen dishes ordered freely until the table is done. Later in the evening, the same Toyosu fish turns up in donburi and bento bowls.
Portland Monthly has included Hamono Sushi among its recommended restaurants.
