The Spot
Gabino's West is the Palm Springs outpost of a sandwich concept built by Marcel Ramirez, a Palm Springs native who named the shop after his late brother, Sebastian Gabino Ramírez, and drew inspiration from his Argentinian father, Jorge Gabino Ramírez. What started as a pop-up grew into a permanent window operation, now with additional locations in Indio and La Quinta.

The menu centers on what the shop calls "craft sandowraps" — a soft, crispy cheese wrap folded around fresh ingredients, finished with a house secret sauce. Regulars point to barbecue chicken, chicken pesto, and turkey cheddar as the versions that keep people coming back, along with portions that run generous for the format.

The setup stays small and unpolished, with a hole-in-the-wall feel that's become part of its identity locally. Service gets consistent praise from regulars, who describe the staff as attentive in a shop this size.
