Four sfincione anchor the menu at all times, all studded with fontina and finished with pecorino and seasoned breadcrumbs: the Classic Vito with milled tomato and oregano, a potato version with roasted potato and lemon, a pepperoni pie with Ezzo pepperoni and agrodolce, and a Spicy Tomato & Burrata topped with giardiniera and calabrian chili oil. Around those four, a rotating list of shared plates and pastas — focaccia, blistered-tomato ricotta, panzanella, trofie with pesto, gnocchi with taleggio — shifts with what's available from local farms.
