Saffire comes from Tom Morales, the Nashville-area caterer who founded TomKats Catering in 1986 to feed touring musicians and film crews on location before turning his attention to a permanent restaurant in Franklin, TN. Morales has also built other Nashville-area spots, including The Southern Steak & Oyster, Acme Feed & Seed, and Southernaire Market.
