Noka takes its name from the Japanese word for farmer, an homage chef and owner Amante Domingo pays to his late father, who worked 150 acres of organic farmland in St. Joseph, Missouri. Domingo's own path into cooking started as a kid harvesting produce and washing dishes at his parents' vegan restaurant, an early education that still shapes how the kitchen handles ingredients.

The dining room offers a few different ways to eat: a seat near the bar for something intimate, a live-fire chef's counter for a closer look at the cooking, or communal tables for a looser, shared setup.
