Green Dirt on Oak brings its sheep dairy farm in Weston, Missouri into the city, building its kitchen around the Animal Welfare Approved farm's sheep's milk cheeses, made both there and in an on-site cheese kitchen. House-made breads and pastries, and ingredients pulled from local farmers and producers, round out the approach.

The menu pairs those cheeses with humanely raised lamb, house-made pâtés and pickles, a locally raised ham sandwich at lunch, and a lamb chop at dinner. Cheese and charcuterie boards are a through-line, with regulars pointing to the Show Me board and the Cheese Kitchen Martini.

The building splits into two experiences: an upstairs dining room for dinner, and a downstairs cheese shop and café serving brunch, coffee, and retail cheese. A daily Cheese Hour puts craft cocktails and charcuterie on the rooftop deck, and a Sunday Night Jazz series pairs local musicians with the dinner menu. The space itself carries soaring ceilings, exposed beams, wood, brick, and tile.
