Uchiko Denver carries forward the spirit of Uchi, Chef Tyson Cole's original non-traditional Japanese restaurant, but leans harder into fire — layering smoke and char onto clean, fresh flavors. The Cherry Creek North location is led by Chef de Cuisine Andres Araujo and Head Sushi Chef James Buddie.
The menu moves between raw and cooked: toro nuta with bluefin tuna, blueberry lemon dashi, and pistachio; bluefin chutoro nigiri; and hearth-roasted lobster with tom kha, king trumpet confit, and umeboshi butter. A s'mores dessert built on toasted barley, black sesame, and torched marshmallow closes things out.
Uchiko is part of Hai Hospitality, the group that grew out of Cole's original Uchi, with sister restaurants operating under the same name in other cities.
