The Spot
The Plimoth takes its name from Plymouth, Massachusetts, chef-owner Pete Ryan's hometown. Ryan came to Denver in 1999 to join the faculty at Cook Street School of Culinary Arts under chef Michael Comstedt, and cooked at Z Cuisine before opening this Skyland spot, where he's since trained a number of Denver cooks along the way.

The kitchen runs a seasonal menu built on a modern, casual take on classical French technique. Starters have included cast iron cornbread with apricot jam and Colorado honey butter, and country-style pork rillette with pickled jardinière; mains move through cast iron chicken, Alaskan halibut, and sockeye salmon, with rabbit also turning up on tables according to regulars.

Ryan holds sommelier certifications, and the wine list reflects it — substantial enough to anchor a running series of monthly wine dinners, with servers on hand to walk guests through pairings.

The Plimoth has built a loyal following of regulars in the neighborhood over its years on East 28th Avenue.
