Switchback Smokehouse cures and smokes its own meats and fish daily, using apple and cherry wood, out of a casual counter-service spot in Evergreen, Colorado. The butcher shop sells proteins by weight — pulled pork, Montreal-style dry-aged and smoked brisket, sliced chicken, smoked duck breast, bourbon-glazed salmon, whole smoked chicken legs, house bacon, and St. Louis-cut ribs by the half or full rack — alongside a rotating sausage link and a lineup of made-from-scratch barbecue sauces on the table.
The sandwich menu includes the Devil's Elbow (pulled pork with fried pickles and coleslaw on brioche), the John Candy (house bacon, lettuce, tomato, and bacon aioli on sourdough), the Rooster Booster (sliced chicken with remoulade and fried onions), the Broken Rover (a brisket riff on a Reuben), and the District Five (smoked duck breast with goat cheese and garlic aioli).
Seating is outdoors along Bear Creek at picnic tables, with a setup built for hikers, bikers, and families passing through the surrounding trail systems. 5280 Magazine has included Switchback Smokehouse among its recommended Denver-area barbecue spots.
