Our Take

The line on Colfax is real civic ritual at this point, and the biscuits it leads to are enormous, photogenic, and built to be remembered as an event.

An event is what they are. As breakfast, the builds run sweet and heavy, the biscuit underneath is architecture rather than baking, and the plate never justifies the wait attached to it. Denver treats this line as an institution. Institutions answer for the plate too.

The Spot
On Colfax Avenue in City Park, this space operates as a shared home for two casual concepts — Denver Biscuit Co. and Fat Sully's NY Pizza — both run by Atomic Provisions, LLC out of one kitchen and counter.

Denver Biscuit Co. serves biscuit sandwiches, while Fat Sully's turns out New York-style pizza by the slice and pie, giving the Colfax address two distinct menus under one roof.

The pairing extends beyond this Colfax location, with additional Denver Biscuit Co. and Fat Sully's counters across the Denver metro, in Golden and Colorado Springs, at Stanley Marketplace in Aurora, as far as Overland Park, Kansas, and a Fat Sully's outpost at Denver International Airport.
