Hops & Pie opened on Denver's Tennyson Street in September 2010, started by Drew and Leah Watson after years running fine dining kitchens in Sonoma/Napa and San Diego County. They traded that world for a neighborhood pizza and beer joint built on scratch cooking and a rotating tap list.

The menu covers slices, traditional, pan, Detroit-style, and gluten-free pies, plus sandwiches built on house-smoked meats and salads made with local ingredients. Beer runs 22 taps that keep turning over, and a covered patio stays open year-round regardless of weather. In February 2020, the team added Berkeley Donuts inside the space, a potato-style donut shop.

The restaurant has grown since its start, expanding from a six-person team and 34 seats into a space of more than 30 teammates and 84 seats. It has become a fixture of the neighborhood, with regulars pointing to the sourdough pizza and craft beer selection as reasons they keep coming back, and it's drawn coverage from The Infatuation.
