Manchamanteles takes its name from a mole whose name translates to "tablecloth stainer," a nod to the layered, contrasting flavors — sweet against savory, smoke against spice — that define the kitchen. Chef Geno Bahena cooks what the restaurant calls cocina de humo, using an Aztec grill powered by mesquite and oak to build flavor through radiant heat and open flame.

The menu is built around prime Black Angus, ABF chicken, and handmade corn tortillas, with signature moles rojo and negro anchoring a rotation of seasonal Mexican dishes. Cochinita pibil has become a standout among regulars, alongside the moles themselves, which diners consistently point to as the kitchen's strength. A monthly tasting menu, 7 Moles del Universo, runs alongside Patio y Parrilla, a live-fire series centered on the Aztec grill during warmer months, with seating on the restaurant's Bucktown patio.
