Our Take

311 is ten seats inside a converted one-bedroom in the South End, run by married couple Carrie Ko and chef Wei Fa Chen, and it operates like a space that has been thought through down to the inch. Two seatings a night, eighteen courses, no wasted motion. The scale is the point: this isn't a dining room pretending to be intimate, it's an actual apartment doing the work of a temple.

Chen's obsession is sourcing, and it shows before the nigiri even starts. The opening run of appetizers carries his personality directly — tilefish with its scales fried crisp is the kind of dish that tells you immediately what kind of cook you're dealing with. Then the meal turns into a long stretch of nigiri built course after course on fish good enough to make you start plotting your next reservation before you've finished this one.

Service and room match the food — composed, unhurried, exact. The complaints that surface are about cost and hype, which is fair warning but not a real argument against what's on the plate; eighteen courses of this quality don't come cheap anywhere, and the hype here is earned rather than manufactured.

A Michelin star in 2025 confirms what the room already knew. 311 built something genuinely new in a city that hadn't seen a serious challenger to its omakase hierarchy in years, and it did it from an apartment.

The Spot
311 Omakase occupies a ten-seat counter in Boston's South End, inside what was once a one-bedroom apartment. It's run by married couple Carrie Ko and chef Wei Fa Chen, with two seatings each night built around an omakase format in which the chef sets every course.

Chef Wei spent seven years honing his craft at an acclaimed Japanese restaurant in Boston before training under Masa Takayama at the first 3-star Michelin Japanese sushi restaurant in the US, work that shaped his approach to sourcing and technique.

The meal runs eighteen courses, opening with a handful of appetizers — a tilefish dish with crispy fried scales has become a recurring highlight — before moving into a long stretch of nigiri centered on the quality of the fish itself.

Michelin awarded 311 Omakase one star in 2025.
