minibar is José Andrés' laboratory and the most concentrated dose of imagination in Washington dining: a counter where each course is invented, narrated, and often detonated in front of you. Two Michelin stars certify what the counter makes obvious — the play is backed by flawless technique.

Avant-garde menus age badly when the ideas outrun the cooking. Two decades in, minibar's don't. It remains the city's best answer to the question of what dinner can be when nobody is being sensible.

The Spot
Minibar is José Andrés's restaurant in Penn Quarter, sharing its space with Barmini, the adjoining cocktail bar built for drinks before or after the meal. The pairing gives the address a two-sided identity: a serious counter experience on one side, a bar on the other.

At the counter, chefs work in full view of guests, turning the preparation and presentation of each course into something diners watch unfold rather than simply receive. Reviewers point to caviar among the dishes worth noting, and the room has built a following of repeat visitors who return for the chef interaction as much as the food itself, often treating it as a special-occasion destination.
