The Chicken Supply builds its menu around Filipino fried chicken, sold by the piece: wings, drumsticks, dark meat thighs, and white meat cut into smaller sticks meant to stay juicier under the crust. Sides lean into the same throughline — garlic fried rice, monggo beans and rice topped with chicken skin, cold pancit bihon, coconut collard greens in the style of laing, marinated vegetables, house pickles, and Sichuan-salt crispy potatoes, with banana ketchup and a Tinian chili hot sauce on the side.

The Greenwood Ave location in Phinney Ridge has built a regular following known to sell out on a given night, and the fried chicken has developed a reputation for its crispy, distinctively textured coating. A second location operates in Tacoma, with a catering trailer called Biig Biird bringing the chicken to events around the area.
