Surrell occupies a corner of Madison Valley built entirely around the tasting menu — no à la carte option, no shortcuts. Chef Aaron runs the kitchen with a Modern Pacific Northwest focus, and the restaurant pairs its food with a wine list built specifically around Washington producers.

Diners choose between two tasting formats: an 11-to-12-course experience or a shorter 5-course version, both served in a room designed for occasion-driven visits. Surrell also handles private dining and events out of the same space.

The James Beard Foundation named Surrell's chef a 2026 finalist for Best Chef Northwest & Pacific. The restaurant also appears on Eater's Essential 38 list for Seattle.
