Seattle Biscuit Company brings scratch-made biscuits to Fremont, built on a menu that leans into local sourcing under the motto "Southern Born, Northwest Raised." Chef Sam sources ingredients close to home, working Mad Hatcher Farms fried chicken, Carlton Farms pork in the sausage gravy, and Beecher's cheese into several builds.
The biscuits range from the fully loaded Gus — fried chicken, egg, sausage gravy, pickles, and Walla Walla sweet onion mustard — down to Justa, a plain biscuit meant for topping however you like. Sides include Delta Grind stone-ground grits, collard greens, and the fried chicken served on its own. A covered patio keeps dine-in going regardless of weather, with take-out also available.
Regulars point to the fried chicken and biscuits as the draw, along with friendly, attentive service, even as the small space means lines can build.
