Day-to-day kitchen leadership runs through Chef Gage Smit, who grew up on a banana farm in Maui and trained at the University of Maui College before working in kitchens including Eleven Madison Park, McCrady's, and Vintage Cave Honolulu, and running Fairmont Orchid's Brown's Beach House prior to Toro.
