Our Take

Shizen is proof that vegan sushi doesn't have to apologize for itself. In a city with no shortage of raw fish temples, this Mission spot built something genuinely its own: a roll list that treats plant ingredients as the point, not the substitute. The Prime Suspect stacks crunchy sweet potato crisps against soft marinated eggplant and creamy gochujang aioli, layering enough texture that the absence of fish stops registering as an absence at all. The Surprise Ending hides a habanero aioli bite inside an otherwise composed roll. The Boddy and Soul works a lighter fry against spicy aioli and shichimi togarashi. None of it reads as a workaround.

The rolls are where the kitchen's intelligence lives, and they're worth building a visit around. Portions run tight and the bill adds up faster than a casual Mission spot suggests it should, but the room, the service, and the consistency back up the price.

A Michelin selection in the city's most recent guide confirms what the regulars already know. Shizen earned its place by being singular, not just virtuous.

The Spot
Shizen is a vegan sushi bar and izakaya that combines classic shojin and sushi techniques with local, seasonal ingredients. Instead of imitating animal proteins, the kitchen builds its dishes from tapioca, mountain yam, konjac, and bean curd, treating these components as the point rather than a substitute.

The nigiri lineup swaps fish for things like marinated eggplant torched with saikyo miso, smoked and glazed bean curd, and grilled okra with garlic oil and truffle salt. Small plates include panko bean curd katsu, shiitake stuffed with shredded tofu, and a plant-based kaarage with spicy agave aioli. The shio ramen comes rich and complex, built on bean curd chashu, bamboo shoots, and tempura and grilled mushrooms, and the yuba salad rounds out a menu organized around starters, salads, small plates, ramen, and sushi served at a dining room and a dedicated sushi bar counter.

Michelin selected Shizen in its 2026 guide, and the restaurant has built a following as one of the few dedicated vegan sushi spots in the city.
