Chama Gaucha's downtown San Antonio location brings the churrasco format that the brand built in 2008 to a two-level, roughly 12,000-square-foot space near the River Walk, the Alamo, and the Majestic Theatre, including a mezzanine level. Meats are rodízio style: gauchos circulate through the dining room continuously, carving Midwest USDA Prime beef that's corn-fed and aged 45-plus days directly onto guests' plates, with a table-side card system (green for more, red for a pause) controlling the pace.
Cuts include picanha, filet mignon, fraldinha, ribeye, linguiça, Colorado lamb chops, costela, and marinated chicken. A salad bar running more than thirty items — seasonal vegetables, imported cheeses, charcuterie, and Brazilian accompaniments — runs alongside sides like caramelized bananas, fried polenta, garlic mashed potatoes, and pão de queijo. The location is part of a group that also operates in Houston, Katy, Dallas, and Chicago.
