June BYOB is the work of chef Richard Cusack and his wife Christina, a Level 4 certified sommelier through the Wine School of Philadelphia. Chef Rich trained under Pierre Calmels at Bibou BYOB and worked at Daniel NYC, Le Bec Fin, Parc Rittenhouse, and Le Cheri, along with time at Michelin-starred kitchens in Paris. The restaurant is named for his mother, June, and traces back to the earliest cooking lessons he had with her in their South Philadelphia home.
The Cusacks opened June BYOB on East Passyunk Avenue in Philadelphia in August 2019, then relocated the restaurant to Collingswood, NJ in August 2021. The menu runs classic French technique through contemporary twists — dishes like Chef Pierre Calmels' Escargot, Lobster Thermidor, and Beef Wellington sit alongside a Sunday tasting menu that rotates weekly. The signature is the tableside Canard à la Presse Voyage: a whole Muscovy duck marinated in red wine, roasted and carved tableside, its sauce pressed from the carcass in an antique French duck press and finished with cognac-flambéed shallots and herbs, followed by crêpes suzette flambéed at the table.
