Shotgun Willie's is Texas barbecue transplanted whole into Madison, right down to the wait. Weekends bring a line, and the line is the point: it means the brisket sells because it's earned, not because it's the only option in the room. That brisket is American wagyu, smoked tender enough to fall apart before the knife does its job, and it sits alongside a Texas hill country sausage with real snap and salt and pepper ribs that run out before the day does.

The sides aren't afterthoughts. Dill potato salad has enough acid to cut the fat, the baked beans carry real tang, and the jalapeño cornbread crumbles the way it should instead of turning to cake. Nothing on the tray is filler, which is rarer at barbecue counters than it should be.

The room commits fully to the bit — Willie Nelson, Texas plates, college pennants, memorabilia stacked past the point of restraint — and somehow that excess reads as sincerity rather than theme-park dressing. A bigger space hasn't diluted what made the smaller one worth the drive.

Michelin selected it in 2025, and a national list took notice too. Both are footnotes to what's actually happening in the smoker.

Shotgun Willie's BBQ takes its name from a Willie Nelson song, not from founder Bill, who spent years cooking brisket and other meats in backyards around Houston before relocating to Nashville. He first opened a bakery specializing in Tex-Czech kolaches, began smoking brisket to fill them, and found enough demand to pivot into barbecue full-time — launching a food trailer in 2016 before opening a brick-and-mortar restaurant a few years later.

The menu runs on Texas fundamentals: USDA prime brisket, Tennessee-style pulled pork, Texas Hill Country sausage links, salt-and-pepper pork ribs, and smoked chicken, served with scratch-made sides like queso mac, honey poppy seed slaw, dill pickle potato salad, and jalapeño cornbread. Texas sheet cake and bourbon banana pudding round out dessert, and brisket is the dish reviewers keep coming back to.

Eater named Shotgun Willie's BBQ to its list of 38 essential Nashville restaurants, The Infatuation scored it 9.1 out of 10, and Michelin selected it for the 2025 guide.
