Pastis brought its Parisian bistro formula from New York and built the Wedgewood-Houston version to the same brief: black-and-white tile, liqueur names stenciled on the sconces, a patio that makes you forget which city you're in. It's a room built for lingering over a martini or a bottle of something sparkling, and it earns that lingering.

The kitchen backs up the atmosphere with the classics done right. The french onion soup is the dish worth the trip on its own — rich, correct, the kind of thing a French bistro either nails or fakes, and this one nails it. Escargot and fries hold up the rest of the menu, and brunch is one of the strongest versions of that meal in town. None of it reinvents anything. It doesn't need to. Traditional bistro food, cooked consistently well, is the whole promise, and Pastis keeps it.

The recognition has followed the consistency rather than any single showy dish — the restaurant has landed on national lists twice and stayed a fixture in local coverage. That's the right kind of praise for a place built on doing the standards properly, night after night.
