Henrietta Red is built around the raw bar, and the raw bar is the argument. A dozen oyster varieties move across the room on ice at any given moment, alongside sharper things like a cobia crudo cut with almond, serrano, and mint. This is seafood cooked by people who understand restraint — nothing muddies the point of the shellfish itself.

The room backs up the kitchen's confidence. Bright, airy, more coastal cottage than Germantown industrial, it reads as considered rather than decorated. The cooking outside the raw bar holds the same line: a whole trout handled simply, risotto built around whatever the season offers, black walnuts and mushrooms one stretch, pea shoots and miso another. None of it strains for attention. It doesn't need to.

Opened in 2017, it set a bar for the neighborhood that later arrivals have had to answer to, and it hasn't coasted since. Three James Beard nods for the chef and the restaurant across three straight years confirm what the plates already show: this is sustained, not lucky.
