Taco Naco KC traces back to a graduate school project that worked its way through farmers' market pop-ups before becoming a quick-service restaurant. It's local and minority owned and operated.
The menu centers on quesabirria tacos: birria-style brisket folded into stone-ground white corn tortillas with melted cheese, served with a consommé for dipping. Tacos a la Mexicana bring tripa, buche, deshebrada, and slow-cooked guisados like pork verde and pork roja on corn tortillas topped with cilantro and onion. Burritos Juárez take a Chihuahua-style approach — tightly rolled flour tortillas stuffed with refried beans, cheese, and guisado fillings, skipping rice and lettuce. Margaritas, Mexican beers, and agua frescas round out the drinks, with patio seating for lingering over a meal.
