Truth BBQ brings Central Texas-style barbecue to Houston's Washington Avenue Coalition area, built on a philosophy pitmaster Leonard Botello IV describes as doing things the hard way: 18-hour cooks on wood-burning offset smokers, with sides and desserts made from scratch daily. The core lineup runs through whole brisket, pork ribs, and smoked whole turkey breast, alongside house sausage links and bottled sauces and pickles sold under the Truth name.
Sides pull their own weight here — corn pudding, mac and cheese, tater tot casserole, and brussels sprouts show up regularly in what regulars order alongside the meat platters. Long waits are part of the routine, and the crowd keeps coming back anyway.
Botello also teaches hands-on barbecue classes on-site, passing along the same smoking techniques used in the restaurant. Truth BBQ has earned a spot on the Eater 38, was named to Houstonia Magazine's 2025 best-of list, and has received Michelin Bib Gourmand recognition in both 2024 and 2025.
