Our Take

Tejas Chocolate + Barbecue sounds like a gimmick on paper — a chocolate shop bolted onto a smokehouse — but the combination reads as sincere rather than cute. This is a kitchen that treats both halves of its name as a real discipline, not a novelty hook, and the Tomball crowd that drives out for it isn't going for the premise. They're going for the smoked meat.

The barbecue itself is the case: the kind of plate that earns repeat visits from people who have better options closer to home. Service matches the food — attentive, unhurried, the kind that makes a drive to a suburb feel justified rather than tolerated. The complaints that surface are about price, not quality, which is a different problem than most barbecue joints have.

Back-to-back Bib Gourmand recognition from Michelin isn't a fluke of timing. It's confirmation of what the room already knows: this is a smokehouse worth the trip outside the city, chocolate dessert included, cost be damned.

The Spot
Tejas Chocolate + Barbecue pairs two crafts rarely found under the same roof: a Texas barbecue operation and a bean-to-bar chocolate program, both made in-house in Tomball. The barbecue runs on a house-made brisket rub and covers the fundamentals — brisket, pulled pork, turkey, pork ribs, kielbasa, and pork belly — served straight, stacked into loaded spuds, folded into tacos, or built into signature sandwiches like the Brisket & Blues.

The chocolate side works from cacao origin, aiming to let the bean's own character carry the flavor rather than layering it over. That program surfaces again at dessert, where chocolate panna cotta, chocolate bread pudding, and truffles close out the menu. Sides like poblano mac and cheese and carrot soufflé round things out, alongside a rotating weekly soup.

Michelin awarded Tejas Chocolate + Barbecue a Bib Gourmand in 2025.
