Mercantile opened in 2014 inside Denver's Union Station as chef Alex Seidel's second restaurant. The space changes character over the course of a day: a café serving fresh, casual fare during daylight hours, then a fuller dining room by night, with seasonal dishes arriving in waves meant for sharing.
The kitchen works from relationships with local farmers, producers, and purveyors, and the menu shifts to track the season. Regulars return for the bone marrow, shishito peppers, house pasta, and bread service, alongside sandwiches and pasta dishes that show up often in what diners order.
Michelin has selected Mercantile in its Colorado guide in both 2024 and 2025.
