Quartino Ristorante & Wine Bar is a Texas outpost of Gibsons Restaurant Group's Chicago original, occupying a two-level space in Grandscape, The Colony, with a mix of indoor and outdoor bar and dining room seating. The build leans into sand-toned brick and ivy-shaded awnings for a relaxed but polished feel.
The kitchen makes its pizza dough daily and stretches it by hand before firing it in a stone hearth oven, visible from a display pizza kitchen. Pasta follows the same hands-on approach, shaped and cut in-house in what the restaurant calls its Pasta and Patisserie kitchen. A vintage salumeria case stocked with DOP-certified cured meats and cheeses anchors the wine bar side of the room, served alongside traditional spuntini.
Signature dishes include Neapolitan-style pizza, handmade pastas and risottos, and regional Italian specialties built around that salumi and cheese program. The wine list is built to be value-driven, pulling from small-production Italian estates, and rounds out with Italian cocktails.
