TriBecca's Sandwich Shop traces back to 2017, when Becca Grothe, then a sous chef at Sunday Dinner Club, brought her Cubano to chefs Josh Kulp and Christine Cikowski. What followed was a stretch of pop-ups, recipe testing, a maternity leave, and a pandemic delay before the concept settled into a permanent home on Belmont Avenue in Avondale.
Grothe's cooking draws on her Western Illinois, Midwest roots, and the Cubano remains the shop's known order. Her husband, chef Cam, runs Tuber's Donuts out of the same space, making the shop a family operation in practice as well as name.
