Rendang Republic centers its menu on rendang — beef, chicken, or jackfruit braised in spices, aromatics, and coconut milk for eight hours. The rendang plate serves it the traditional way, with a base of rice, fried rice, noodles, or salad, alongside collard green gulai, pickled vegetables, and a choice of red or green sambal.
The kitchen also reworks rendang into Chicago-inflected dishes: a rendang take on the Italian beef sandwich, rendang tacos on roti, and a rendang burger with jalapeño American cheese and rendang aioli. Other menu items include an Indonesian fried chicken sandwich with coconut-buttermilk battered chicken and green papaya slaw, chicken and tofu sate with peanut sauce, and a hot dog made in collaboration with The Duck Inn. Most of the menu is Zabiha halal certified.
A coffee and tea bar runs alongside the food menu, including house Sumatran drip coffee, pandan and rendang-syrup lattes, and kopi telur, a whipped egg coffee finished with condensed milk and lime.
