Papa's Cache Sabroso traces back to the early 1970s, when Johnny Velez opened the first Cache Sabroso on Cermak after coming to Chicago from Puerto Rico. The restaurant moved to North Avenue and California in 1991, and in 1998 Johnny passed it to his brother Victor, known as Papa Pollo. Papa relocated the restaurant again in 2002, settling into its current home on Division Street, where it's remained since.
The menu centers on two things: Papa's pollo chon, rotisserie chicken marinated in a family secret sauce, and the jibarito, served in steak, chicken, or vegetarian versions. Run today by Nancy and Papa, the restaurant keeps things casual and family-style, with a room built around warmth and repeat customers rather than turnover.
