Flo & Santos takes its name from an actual Chicago couple: Florence, from Poland, and Santo, from Italy, who met, married, and raised a family on the South Side. Their table combined both heritages, and that's the restaurant's whole premise — Polish classics like pierogi, kielbasa, and potato pancakes served alongside traditional Italian pastas and Chicago tavern-style pizza, plus mashups like the Ravirogi and a Combo sandwich that splits the difference between the two cuisines.
The space is a big, warm pub: exposed brick, red booths, seventeen flat screens for sports, and a spacious outdoor beer garden with heaters for cooler weather. Chef Lupe, who started working in restaurants at fifteen and trained at the upscale Italian spot La Nottee in the western suburbs, came up as the original sous chef who helped develop the pizza program here and still runs the weekly specials.
It sits in Chicago's Near South Side, positioned as a family-friendly spot that gets more social after dark.
