Omakase Experience by Prime Fish is a six-seat counter tucked off Providence Road in SouthPark, an offshoot of Chef Robin Anthony's Prime Fish. Anthony sources fish flown in directly from Tokyo's Toyosu Fish Market and prepares every dish himself, working in the Edomae tradition in front of the guests seated at his counter.
The menu runs 10 to 15 courses of small plates and seasonal nigiri, with Anthony pairing each course with sake drawn from his own knowledge of the category. The format is deliberately small and close: one chef, one counter, a handful of diners watching each course come together.
Anthony was born near Bali and settled in Charlotte after time behind Raleigh's sushi counters, developing his technique on his own. Omakase Experience by Prime Fish was Michelin Selected in the 2025 American South guide and has been named to the Eater 38.
