Mal Pan takes its name from a phrase belonging to partner Andre Lomeli's grandmother — "cuando hay hambre, no hay mal pan," when you're hungry, there is no bad bread — tracing back to her path from Merida, Yucatan to Los Angeles. The menu draws on both modern and classic Mexican cooking, with dishes pulling inspiration from Baja to the Yucatan.

The kitchen makes its own corn tortillas through nixtamalization, using heirloom corn sourced from Masienda, alongside fresh Sonoran-style flour tortillas. Sauces, salsas, marinades, mousses, and aiolis are made in-house as well. The bar mirrors that hands-on approach, pouring cocktails built on artisan spirits from the US, Mexico, and the Caribbean, finished with housemade syrups, fresh-squeezed juices, shrubs, and bitters.

In SouthPark, Mal Pan has built a following around brunch and drinks, with regulars returning for what reviewers describe as consistent food and service.
