La Piscina sits five floors up at the Austin Proper Hotel, and it commits fully to the bit: floor-to-ceiling windows, desert plants, a dining room that reads more like a Mexican villa than a hotel rooftop. Inside, the kitchen runs a Mexican-leaning Tex-Mex menu — fajitas, ceviches, lobster quesadillas. Step out to the pool deck and the menu tightens into cocktails, small plates, and raw seafood built for lingering rather than a full sit-down meal.

The food doesn't need to carry the whole case, and it mostly doesn't try to. The fajitas could use more force behind them, and the oysters charge rooftop prices for what's still just an oyster.
