Fukumoto is an izakaya in the Corazon complex on Medina Street, built around yakitori grilled over Japanese charcoal alongside sushi, sashimi, and classic Japanese comfort food, all served in a casual gastropub room.

Chef and owner Kazu Fukumoto was born in Fukuoka, Japan. He started as a dishwasher at Austin's Musashino Sushi Dokoro in 1999 and worked his way up under owner and chef Smokey Fuse, eventually spending ten years as head sushi chef there. Before opening his own place, he returned to Japan to study yakitori technique at Hiroya Yakitori in Tokyo, then opened Fukumoto in September 2015.

The menu runs from charcoal-grilled skewers — negima, tsukune, bonjiri, a signature king salmon skewer — to nigiri, traditional and special maki, and kitchen dishes like karaage and cornflake-battered shrimp. Diners can also opt for an omakase sashimi, letting the chef choose premium and fatty cuts.

Fukumoto has built a reputation around strong service and atmosphere along with its creative specialty rolls, and it was named to a local city magazine's best-of list in 2025. The Infatuation has rated it 8.3/10.
