Noble Rice grew out of a smaller Hyde Park restaurant of the same name, which was remodeled into the omakase spot Koya in 2020. This expanded version, on Channelside Drive in the Channel District, broadens the concept into a modern Japanese menu covering à la carte sushi, ramen, izakaya-style small plates, and a separate omakase counter, alongside a full bar built around Japanese whiskey and sake.
The sushi program runs from traditional to inventive: king salmon nigiri sourced from New Zealand sits next to maki like the negi toro roll, which combines spicy fatty tuna, scallion, and tobanjan kewpie in a black garlic soy sauce.
