Larb Thai focuses on Isan cooking, the street food tradition of Northeastern Thailand, using recipes passed down through generations. The grilled section carries dishes like Gai Yang (grilled chicken with tamarind chili sauce), Kor Moo Yang (grilled marinated pork jowl), and Sai Krok Isarn (grilled northeastern pork sausage), while the E-Sarn salad section builds out several versions of papaya salad, including Tum Thai and Tum Puu Plara, made with salted crab and pla ra. Larb, including Larb Moo, is a signature dish alongside Som Tum.
The kitchen sources fresh ingredients and prepares dishes from scratch rather than working from shortcuts, part of an approach aimed at the bold, herb-forward flavors associated with Isan cooking.
