E-Jae Pak Mor takes its name from pak mor, a Thai rice-wrap dumpling the restaurant was built around after a friend's fondness for the dish. It opened in April 2021 as a counter-service spot: order at the counter, and the kitchen sends the food out from there.

The menu runs through Thai street food staples — Khao Soi Chiang Mai, Khao Mun Gai, fresh rice wraps, and the namesake pak mor dumplings — with noodles made in-house. Regulars point to that in-house noodle work as a highlight of the menu.
