Terracotta Wine Bistro sits in downtown Santa Fe on Johnson Street, in one of the city's preserved historic buildings. The restaurant built its reputation under former owners Glenda Griswold and Catherine O'Brien, known for a wine-forward, hospitality-driven room, and that foundation carries into its current run.
The kitchen is now led by chef Jose Rodriguez, who grew up in Zacatecas, Mexico, learning to cook alongside his grandmother and mother. His menu ranges widely: Grilled Spanish octopus with hummus and habanero sausage, cast-iron Maryland crab cakes, a Moroccan-style lamb tagine with couscous and apricots, pan-roasted duck breast with apple-celeriac puree, and Chimayo chili-crusted scallops over forbidden black rice. Desserts lean classic, from tiramisu to a coconut-and-chocolate bombe.
