Rancho de Chimayó opened in 1965, when Florence and Arturo Jaramillo turned the Jaramillo family's ancestral home in the village of Chimayó into a restaurant, building the menu from recipes passed down through generations and the region's noted red chile. Florence — known to staff and regulars as Mrs. J — ran the place for decades before her passing in 2025; the restaurant continues today under family ownership, with Laura Jaramillo Ross and Chef Janet Malcolm now carrying the kitchen forward.
The menu holds to New Mexican staples: spicy guacamole, hand-rolled tamales, blue corn enchiladas, chile rellenos, and carne adovada, with sopapillas and local honey to finish. A full bar pours a prickly pear margarita made with the restaurant's own signature tequila.
The restaurant sits in the Sangre de Cristo foothills near the village's Santuario, alongside the Rancho de Chimayó Hacienda, in a setting regulars describe as a longtime community gathering place — gift shop and gallery included.
