Palace serves modern American cuisine from 142 West Palace Avenue in Santa Fe, on a plot of land with an unusually long history of hospitality. The site dates back to 1835, when Doña Gertrudis "Tules" Barceló opened a casino and hotel there that became a fixture for traders, soldiers, and travelers on the Santa Fe Trail — a history the restaurant now leans on as part of its identity.

The current operation runs a regular slate of programming alongside its dining room and patio, including weekly jazz nights with a rotating duo, occasional wine-paired multi-course dinners built around live music, and a standing patio event for guests bringing dogs.
