Palomar opened on NW 23rd Ave in April 2018, owner Ricky Gomez's homage to his family's Cuban heritage. Gomez, a New Orleans native, built his cocktail career at Commander's Palace and Cure before serving as opening bartender at Compere Lapin, then returned to Portland to open a bar of his own.
In the kitchen is chef Ricky Bella, who grew up in Portland's St. John's neighborhood. He started out washing dishes at James John Cafe and came up through the ranks at Beaker & Flask under Ben Bettinger before landing at Palomar.
