Terlingua has been running in East Bayside since 2015, built on Texas-style barbecue filtered through Southwest and Mexican influences. Chef Wilson Rothschild and his team turn out house-smoked meats daily, paired with dishes like fish tacos and ceviche — the fish tacos and brisket in particular have built a loyal following among regulars and out-of-town visitors alike. The bar leans into the same regional inspiration, pouring margaritas, mezcal, tequila, and Mexican lager.
Outdoor seating and a handful of nooks give the space some of its character, and the restaurant draws crowds for its atmosphere as much as its smoker. The Portland Press Herald named Terlingua among the city's best restaurants in 2025.
